Working in the restaurant industry is base on Standard Operation Procedure (SOP). If you don't make it happen, the operation will be stuck. SOPs are set to ensure the smoothness of restaurant. So from the guests are step into your restaurant, then SOPs start. Simply, how to greet customer for the beginning to saying farewell at the end.
Below , is one of the process of SOP .

1.    Hold the menu
Food or beverage menu need to be clean, free of stains

Hold menu at the left hand side in an upright position in front of your chest.

Always smile and maintain eye contact

3.    Present Menu
·         Open the menu to the front pages and hand it to all guests and say: “Here is your menu Sir/Madam”
·         Present  the menu from the right hand side of the guest
·         Always present the menu to the ladies first
·         Lower your body and present the menu at the guest’s eye level
·         Present the menu to women, older guests and children first, then to the host
·         Speak in a warm and cheerful tone of voice
·         Address the guests by name if possible
·         Present the menu from the left hand side instead, if needed
·         Present Special of the day

4.    Leave Guest’s Table
Once you have handed the menus to all guests
Say: “I’ll be back to take your order soon.”
